Bill Grainger's Pizza Dough From Aus

A stunning dough. Easy to make and very easy to eat.

  • 3½ cups all-purpose flour
  • 7 dried yeast
  • 1½ tablespoons honey
  • 1¾ fluid ounces extra virgin olive oil

Method

  • Combine flour, 1 tablespoon sea salt and yeast in a large bowl (I use my KA bowl!)
  • In a separate bowl (I use a jug!) combine honey and 300ml warm water. Gradually add liquid to dry ingredients and mix with your hands to combine. (I cheat and use a wooden spoon then just the dough hook on my KA on the first click- very low)
  • Add the oil then mix to combine
  • Turn the dough onto a floured surface and lightly knead for about 5 minutes or until the dough comes together
  • Place in a food processor with a dough hook and knead for 2-3 minutes, adding extra water or flour as needed. Bill then says you can knead it all by had for an extra 5 minutes. personally- I use my KA for it all!
  • Form dough into a ball and place in an oiled bowl. Rub the top of the dough with oil to stop it going crusty
  • Cover with a damp tea towel and place in a warm, draught free place for 1-2 hours until dough has doubled in size
  • Turn the dough onto a floured surface and punch down with your fist
  • Knead lightly, then divide into 4 balls
  • Place each ball into a small oiled bowl and cover with damp tea towels
  • Place in a warm, draught-free place for 20-30 minutes until dough has doubled in size again
  • Roll out each ball on a floured surface to make a 30cm round base
  • Place each base on a lightly oiled pizza tray before adding pizza toppings
  • For Bill's tomato sauce heat 2tbs olive oil in a saucepan over medium-low heat
  • Add 1 small onion and cook, stirring occasionally, for 5-6 minutes or until the onion is soft
  • Add 2 cloves of sliced garlic and cook, stirring for another minute
  • Add 1 400g tin of crushed tomatoes and bring to the boil
  • Reduce heat to low and simmer for 15 minutes or until thickened
  • Remove from heat and stir in 1tbs balsamic vinegar
  • Season with sea salt and freshly ground black pepper
  • Allow to cool before using
