Lasagne Lady's Red Sauce

Toss all the tinned tomatoes into a large stock pot or crock pot (even better) Add spices to taste Cook on low 2-3 hours (all day in the crockpot) or 1 hour on med/high Stir occasionally * If adding meat, brown first in large pan, breaking it into bite sized pieces, then add about halfway through cooking time* Hard (but much better): Toss all tomatoes (washed and cored) into a large roasting pan. Add onions (peel and quarter) and all garlic cloves. Sprinkle with olive oil, salt and pepper and roast for 45 minutes at 350 degrees F Allow to cool before proceeding Peel tomatoes and garlic, squish them together a bit with your hands into good sized pieces then toss in a large stock pot. (or your slow cooker) Rough chop the roasted onions then toss them in too Add spices, and 4 cups water (room temperature or cold doesn't matter) Simmer ALL DAY (this needs a good 5 hours to come together Stir occasionally, adding more water if sauce becomes thick. It freezes very well, and just about any veggies or meat can be added. Play around with it, all herbs and spices are to taste. This never tastes the same each time I make it. This is the first time I've written it down actually. Enjoy!

- 2 cans stewed diced tomatoes
- 4 cans stewed tomatoes
- 1 can tomato paste
- oregano
- thyme
- fresh basil
- 1 pinch of salt
- cayenne pepper
- 1 pinch of sea salt
- 1 pinch of black pepper
- garlic
- Italian sausages (or ground beef or turkey)
- water
For the Slightly More Difficult
- 2¼ vine tomatoes
- olive oil
- onions (purple are best)
- garlic
