  • 20 grams butter
  • 1 red onion (thinly sliced)
  • 1 teaspoon fresh oregano (finely chopped)
  • 1 courgette (roughly grated)
  • 6 eggs
  • 50 grams grated Parmesan
  • 1 ounce butter

  • 6 eggs
  • 2 ounces grated Parmesan

Method

  • Preheat the oven on 180oC.
  • Heat the butter in a fryingpan and fry the onion and the oregano for 7-10 minutes on small heat until the onion is soft and is beginning to caramelize.
  • Spoon this mixture into 12 shollow muffintin holes and dived the grated zuchini on it.
  • Whip the eggswith 1 tbsp. water and some salt and fresh grounded white pepper.
  • Dived the eggmixture over the zuchini and sprinkle the parmasan cheese over them.
  • Bake in the oven for 10 minutes or until they've puffed up...
