First of all, season then fry the chicken in 2 tbsp of olive oil untill goilden brown ( do that in patches) then set aside. Chop the onions very finely and cook in the olive oil (use all of it as stated above)and the summaq for about 10 minutes. Add the chicken to the onions, cover and cook untill the chicken is thoroughly cooked. Cut the bread into pieces ( one piece for every chicken portion) and arrange it in a larg baking tray. Top the bread with the chicken and some of the summaq onions mixture. Put it in the oven under the grill untill the bread is slightly crispy. Serve with yoghurt and mint salad.
