Emulsify the lemon juice with extra virgin olive oil and salt & pepper Wash the peppers and cut them in thin strips. Cook them briefly in a pan with 1 tbsp of olive oil. Add the chopped herbs and some more salt, and cook for 1-2 minutes more: the vegetables must still have bite. Prepare 4 tinfoil squares, put on each a cod fillet, sprinkle with the lemon and oil emulsion and cover with the peppers. Seal the foil and place the bags in the preheated oven at 180°C for 20 minutes.
