Ingredients

Metric Cups

For the Pasta

  • 250 grams pasta (not fresh)
  • 300 grams tuna (raw, cut into thin strips)
  • 200 grams cherry tomatoes (quartered)
  • 1 aubergine (fried and cut into small cubes)
  • oregano
  • 100 grams breadcrumbs (fine, toasted)
  • extra virgin olive oil

For the Citrus Pesto

  • 100 grams blanched almonds
  • 50 grams salted capers
  • 1 lemon (organic and well washed)
  • 1 orange (organic and well washed)
  • 1 bunch fresh basil

For the Pasta

  • 8⅚ ounces pasta (not fresh)
  • 10⅗ ounces tuna (raw, cut into thin strips)
  • 7 ounces cherry tomatoes (quartered)
  • 1 eggplant (fried and cut into small cubes)
  • oregano
  • 3½ ounces breadcrumbs (fine, toasted)
  • extra virgin olive oil

For the Citrus Pesto

  • 3½ ounces skinned almonds
  • 1¾ ounces salted capers
  • 1 lemon (organic and well washed)
  • 1 orange (organic and well washed)
  • 1 bunch fresh basil

Method

  • Blitz in the mixer the peeled citrus with the almonds, basil, capers and some evoo: you should get a coarse cream.
  • In a bowl put the citrus pesto, the tuna, the tomatoes, the diced aubergine and some evoo and mix gently.
  • Add the cooked pasta and sprinkle with breadcrumbs. Enjoy
