Blitz in the mixer the peeled citrus with the almonds, basil, capers and some evoo: you should get a coarse cream. In a bowl put the citrus pesto, the tuna, the tomatoes, the diced aubergine and some evoo and mix gently. Add the cooked pasta and sprinkle with breadcrumbs. Enjoy

For the Pasta
- 250 grams pasta (not fresh)
- 300 grams tuna (raw, cut into thin strips)
- 200 grams cherry tomatoes (quartered)
- 1 aubergine (fried and cut into small cubes)
- oregano
- 100 grams breadcrumbs (fine, toasted)
- extra virgin olive oil
For the Citrus Pesto
- 100 grams blanched almonds
- 50 grams salted capers
- 1 lemon (organic and well washed)
- 1 orange (organic and well washed)
- 1 bunch fresh basil
For the Pasta
- 8⅚ ounces pasta (not fresh)
- 10⅗ ounces tuna (raw, cut into thin strips)
- 7 ounces cherry tomatoes (quartered)
- 1 eggplant (fried and cut into small cubes)
- oregano
- 3½ ounces breadcrumbs (fine, toasted)
- extra virgin olive oil

- 3½ ounces skinned almonds
- 1¾ ounces salted capers
- 1 lemon (organic and well washed)
- 1 orange (organic and well washed)
- 1 bunch fresh basil
