Chocolate Up and Over Pudding

Make the pudding; Prepare a 2 pint Pyrex dish by buttering or oiling. Sieve flour and unsweetened cocoa into a large mixing bowl. Add all remaining ingredients and beat thoroughly for 2 minutes. Pour into prepared dish. Make the sauce and topping; Mix together unsweetened cocoa, nuts and half of the sugar. Sprinkle over pudding. Make up coffee in a pint measure, sweeten with remaining sugar. Pour over pudding. Bake at 180 degrees c, gas 4, for 50 - 60 minutes.
Introduction
A delicious pudding that makes its own gooey fudgy sauce during cooking and the sponge rises up over the sauce. Occasionally I serve it with whipped double cream for a touch of decadence. Or ice cream is very good too.

For the Pudding
- 4 ounces soft margarine
- 4 ounces granulated sugar
- 2 large eggs
- 3 ounces self-rising flour
- 1 tablespoon unsweetened cocoa
For the Sauce and Topping
- 1 tablespoon unsweetened cocoa
- 4½ ounces chopped assorted nuts
- 4 ounces turbinado sugar
- 3 teaspoons instant coffee
- ½ pint boiling water
