Potato Kugel

Introduction

This is sumptuous dish, similar to potato latkes but baked in a dish. It is a traditional Sabbath dish, served hot at Friday Night Shabbat Dinner.

Ingredients

Serves: 4

  • 6 large baking potatoes
  • 1 large onion
  • 4 beaten eggs
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • ¾ cup vegetable oil

Method

  • Peel, and quarter potatoes and place them in a large bowl of cold water.
  • Grate onion (food processor) and mix with oil, salt and pepper in another bowl.
  • Grate potatoes and mix with remainder of ingredients. Add eggs and mix.
  • Transfer mixture to square glass baking dish that has been sprayed with cooking oil spray and bake in 350 degree oven for 1 1/2 hours.
