Potato Kugel

Peel, and quarter potatoes and place them in a large bowl of cold water. Grate onion (food processor) and mix with oil, salt and pepper in another bowl. Grate potatoes and mix with remainder of ingredients. Add eggs and mix. Transfer mixture to square glass baking dish that has been sprayed with cooking oil spray and bake in 350 degree oven for 1 1/2 hours.
Introduction
This is sumptuous dish, similar to potato latkes but baked in a dish. It is a traditional Sabbath dish, served hot at Friday Night Shabbat Dinner.

- 6 large baking potatoes
- 1 large onion
- 4 beaten eggs
- 2 teaspoons kosher salt
- 1 teaspoon freshly cracked black pepper
- ¾ cup vegetable oil
