Ingredients

Serves: a bottle of cordial

Metric Cups
  • 2 kilograms white sugar
  • 1⅕ litres boiling water
  • 20 elderflower heads
  • 80 grams citric acid
  • 2 lemons (rind grated and sliced)
  • 4⅖ pounds granulated sugar
  • 2⅛ pints boiling water
  • 20 elderflower heads
  • 3 ounces citric acid
  • 2 lemons (rind grated and sliced)

Method

Elderflower Cordial is a community recipe submitted by dextersmummy and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Shake the flowerheads to remove insects.
  • Put the water in a large saucepan and bring to the boil. Add sugar and dissolve. Add grated rind and sliced lemon and citric acid.
  • Put flowerheads into a large bowl and pour over the boiling water. Leave for at least 12 hours covered with cling film. Sieve the liquid and then strain through muslin or clean tea towel.
  • Pour into sterilised bottles.

    Dilute the cordial to taste with lemonade, sparkling water, gin & tonic, use it in recipes or undiluted on top of icecream. It will keep bottled for over a year.
