Ingredients

Metric Cups
  • 300 grams chicken pieces (bite sized)
  • 2 star anise
  • 3 centimetres cinnamon sticks
  • 2 cardamom pods
  • 4 shallots (sliced)
  • 2 cloves garlic (chopped)
  • 2 centimetres fresh ginger (sliced)
  • 1 carrot (wedged)
  • 1 potato (wedged)
  • 1 tablespoon vegetable oil
  • salt (to taste)
  • spring onions (for garnishing)
  • gram celery (for garnishing)
  • 10⅗ ounces chicken pieces (bite sized)
  • 2 star anise
  • 1⅙ inches cinnamon sticks
  • 2 cardamom pods
  • 4 shallots (sliced)
  • 2 cloves garlic (chopped)
  • ⅘ inch fresh gingerroot (sliced)
  • 1 carrot (wedged)
  • 1 potato (wedged)
  • 1 tablespoon vegetable oil
  • salt (to taste)
  • scallions (for garnishing)
  • gram celery (for garnishing)

Method

  • Heat vegetable oil in a pot. Fry spices and add in shallots, garlic and ginger until fragrant.
  • Add chicken meat and stir.
  • Put water, carrot and potato and simmer until chicken carrot and potato tender
  • Add chicken cubes and salt to taste
  • Serve hot and sprinkle with chopped spring onion and celery
