Combine dry ingredients in a bowl. Melt butter and golden syrup or light corn syrup together over a low heat. Mix soda with boiling water, then stir into butter/syrup mix. Stir wet ingredients into dry. Take two teaspoonfuls of mix (about walnut size) and place on greased trays. Leave a few centimetres between each. Cook in slow oven, 150 degrees, for about 15-20 minutes. The biscuits should be firming up around the edges, but still slightly soft in the middle. Loosen them while still warm, but leave to cool on the trays.

- ½ cup unsweetened shredded coconut
- 4 ounces butter
- 1 tablespoon golden syrup or light corn syrup
- 1 tablespoon boiling water

Additional Information
One thing to note about this recipe is the consistency of the mix, which needs to be quite stiff. If it looks too mushy, stir in an extra tablespoon of flour before putting on the trays. Otherwise the biscuits might spread too much and you get that cowpat shape.
