Irish Soda Bread

Introduction

Taken from my Mum's old cook book; Talking about Cakes" by Margaret Bates.

Ingredients

Serves: 3-4

  • 1 pound flour
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon cream of tartar
  • buttermilk (to mix)

Method

  • Sieve together the dry ingredients in a bowl. Add some buttermilk (enough to make a soft, not sticky dough). Use a metal spoon to mix quickly and lightly.
  • Turn onto a lightly floured board and shape into a round. Cut into 4 farls and either bake in a hot oven.
  • Suggested temp is 450°F, depending on size of farls for about 30min. Bear in mind this is for a more old fashioned oven. I find our modern ovens require a slightly lower temp and shorter times.
  • Wrap in a tea towel when it comes out of the oven for a softer soda bread.
