For the Tomato Salad
- 12 plum tomatoes
- 1 small red onion (very small, thinly sliced)
- 15 grams rocket
- 20 black olives (Greek)
- 200 grams feta cheese (plain or from a jar with herbs)
- 1 egg
- 3 tablespoons wholewheat flour
- 2 tablespoons olive oil
For the Dressing
- 3 tablespoons extra virgin olive oil
- ½ lemon (juice of)
- 2 teaspoons fresh oregano (chopped)
- 1 pinch of sugar
- pepper (as you please)

Additional Information
I like to make a small omelette out of the egg I used for the feta and adding 3 more eggs, oregano, salt, pepper. Whisk it together and adding some slices of good quality bresaola ham/salami. This makes a nice thin egg-pancake.
