Variation on Lillian Hellman's Pot Roast

Coat cubes of meat in seasoned flour and saute in some oil in a large Dutch oven or heavy casserole until browned. A dd onion and garlic. Stir. Throw in all other ingredients and cover with a tight fitting lid. Simmer for one to two hours. Serve with crusty bread and the leftover wine.
Introduction
This is taken from Nora Ephron's novel Heartburn. Ephron's heroine and alter-ego, Rachael, does this as a whole pot-roasted piece of beef fillet. I do it as a beef casserole instead.

- cubed chuck steak (or beef bolar blade)
- 1 can mushroom soup (cream of)
- 1 packet french onion soup mix
- 1 large finely chopped onion
- 3 cloves crushed garlic
- 2 cups red wine
- 2 cups water
- bouquet garni
- 1 crushed bay leaf
- oil
- flour (seasoned)
