As long as you use the same size glass/mug/cup for this recipe the ingredients will be the correct amount. Oil and flour a 10 inch baking tin or a Pyrex dish. Sieve the flour with b.p. In a separate bowl beat together the oil and sugar then add the water, orange juice, the cinnamon, then the sieved flour. Pour the mixture into the prepared tin/dish bake for 40-50 minutes in a medium preheated oven. You will know if it's ready by the golden brown colour also test it by inserting a toothpick - if it comes out dry it's ready......easy as that!
Introduction
This is a moist and ultra light cake. Here in Cyprus it is made when people are awaiting good news, translated it is called an "appearance pie". It is made with 7 major ingredients each representing a symbol - it is then made for 7 continuous weeks whether you recieve your good news or not. I just make it because I love it. The great thing is it is suitable for vegans as it is egg less.
