Sweet Orange and Chilli Chutney

Ingredients

Serves: pot

Metric Cups
  • 500 grams onions (peeled and chopped)
  • 900 grams apples (peeled, cored and chopped)
  • 1⅘ kilograms oranges (sweet)
  • 450 grams sultanas (or raisins)
  • 1 tablespoon salt
  • 2 tablespoons ground ginger
  • 1 tablespoon cayenne pepper (or chopped dried chillies)
  • 1⅔ litres vinegar
  • 900 grams sugar
  • 18 ounces onions (peeled and chopped)
  • 32 ounces apples (peeled, cored and chopped)
  • 3⅞ pounds oranges (sweet)
  • 16 ounces golden raisins (or raisins)
  • 1 tablespoon salt
  • 2 tablespoons ground ginger
  • 1 tablespoon cayenne pepper (or chopped dried chillies)
  • 2⅞ pints vinegar
  • 32 ounces sugar

Method

Sweet Orange and Chilli Chutney is a community recipe submitted by grissomsgal and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Put onions in a pan with water and boil for 10 minutes. Add chopped apples, cook for 15 minutes.
  • Peel oranges with a vegetable peeler and then remove pith with a sharp knife.
  • Slice peel into strips with a sharp knife. Put peel and remaining orange pulp through a mincer or blender. Add to pan of apples and onions.
  • Add salt, spices and half the vinegar. Simmer for 1 hour until the peel is tender.
  • Add the rest of the sugar and vinegar and heat and stir until all the sugar is dissolved and mix is thickened. Bottle in normal way.

    • There are a number of errors in the instructions for this recipe. The first thing is that you are told to cut the orange peel into strips but in the next step you are to put the "peel and remaining pulp" in a blender. If you are going to put the peel into the blender then why sit and cut it into strips? In addition, you are told to cook the mixture until the peel is soft but how will you know if the peel is soft if you have put it through a blender or mincer as you were instructed to do earlier? I cut all the peel into strips but in hindsight I wonder if half the peel and half the orange pulp should be blended to help thicken the chutney.

      Secondly the instructions say to boil the onions pieces in water but you are not given any indication as to how much water is needed. Do I just use enough to cover the onions or should I use a lot more? What do I do with the water after I have finished boiling the onions. I left the water in the pot but I am not sure if that was what I was meant to do.

      The third error is that although the list of ingredients includes raisins or sultanas, at no point in the instructions are you told to put them into the pot. Do I put them in with the apples, with the orange or closer to the end?

      Finally I think that the amount of vinegar is far too high for the amount of sugar. Either the sugar needs to be increased or the vinegar needs to be decreased.

      The taste is nice but be aware of the errors in the instructions.

    • This is delicious! Had a head of oranges that I didn't know what to do with, very happy that I found this recipe to use them up, lovely chutney with orange flavour and a great chilli kick! Delicious with some chicken :)

    • This recipe is awful. There is far too much vinegar. I also halved the recipe as it was a trial run and I have a 1kg ice cream tub full of it! I have never actually tasted anything as bitter and horrid.
