Eggs in Coconut Milk

Grate coconut. Extract coconut milk by puting hot water in grated cocunut. Put oil in pan. On medium heat, add sliced onion. Brown it. Add salt, red chile powder, cumin powder, coriander powder and turmeric powder. Add 1/2 cup water. Saute well. Add boiled eggs (whole). Simmer in gravy. Add cocunut milk. Simmer till milk thickens. Sprinkle coriander leaves and serve immediately.

- 5 medium eggs (hardly boiled)
- 1 cup grated coconut
- 1 teaspoon red chile powder
- ½ teaspoon ground cumin
- ½ teaspoon turmeric
- ½ teaspoon ground coriander
- 3 tablespoons vegetable oil
- 1 pinch of salt (to taste)
- 2 sliced onions
