Ingredients

Serves: 20

Metric Cups
  • 1 kilogram self-raising flour
  • 2 teaspoons baking powder
  • 250 millilitres sugar
  • 500 millilitres muesli (with nuts and fruit)
  • 250 millilitres citrus muesli
  • 250 millilitres digestive bran
  • 500 millilitres cornflakes (crushed)
  • 250 millilitres mixed dried fruit
  • 125 millilitres nuts (chopped)
  • 125 millilitres dried mango (chopped)
  • 125 millilitres dried peaches (or pineapple - cut fine)
  • 500 millilitres buttermilk
  • 500 grams butter (or margarine - melted)
  • 2⅕ pounds self-rising flour
  • 2 teaspoons baking powder
  • 9 fluid ounces sugar
  • 18 fluid ounces muesli (with nuts and fruit)
  • 9 fluid ounces citrus muesli
  • 9 fluid ounces digestive bran
  • 18 fluid ounces cornflakes (crushed)
  • 9 fluid ounces mixed dried fruit
  • 4 fluid ounces nuts (chopped)
  • 4 fluid ounces dried mango (chopped)
  • 4 fluid ounces dried peaches (or pineapple - cut fine)
  • 18 fluid ounces buttermilk
  • 17⅔ ounces butter (or margarine - melted)

Method

Luxury Muesli Rusks is a community recipe submitted by HelenMare and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Mix all the dry ingredients
  • Add the butter and buttermilk, mix well. It will be a very stiff dough. Add a little bit of milk or cream if you cannot combine all the flour
  • Press down into a oven dish approx 400mm x 300mm
  • Cut into approx 20mm slices - 19 or 20 down and 3 accross Bake at 160C for 1 hour. Allow to cool for approx 30 mins and cut through the slices again.
  • Turn out of pan and break slices loose.
  • Dry in over at 70C for approx 6 hours
  • Mix all the dry ingredients
