Heat oil in a wok or large non-stick skillet. Fry chicken pieces until brown. In another frying pan, heat oil on low heat. Add the minced ginger and garlic, the schezuan sauce. Fry then add the soy sauce. Add the honey and simmer gently on low heat. Add a few drops of oyster sauce. Add the prepared sauce to the fried chicken and stir so chicken pieces are completely coated. Serve hot.
