Creamy Rice Pudding

Cook rice in 1 and 1/2 cups of water. In another saucepan, combine cooked rice, 1 and 1/2 cups of milk, sugar and salt. Cook over medium heat until thick and creamy, 15-20 mins. Stir in remaining half cup of milk, beaten egg, and raisins. Cook for 2 mins more, stirring constantly. Remove from heat and stir in butter and vanilla. Serve straight away. Try adding other dried fruits for a change, for example, apple with cinnamon. Or apricots.
Introduction
A easy, quick and delious pudding done on the stove top. You can also use left over cooked rice, which cuts out one of the steps. Makes 4 good servings.
