Carrot Cake With Green Flecks

Soften butter, beat in sugar, add sour cream and eggs and beat thoroughly. Sift flours, (return bran flakes from whole wheat flour if any) baking soda, spices and salt. Fold into sour cream mixture. Add carrots and stir through. Turn into a greased and lined 20cm square tin although I usually bake it in a ring tin. Bake at 180ºC for about 1 hour. When cold, ice with cream cheese icing.
Beat cream cheese, butter and vanilla until smooth, add confectioners' sugar and beat until smooth again.
Introduction
A yummy carrot cake with green flecks that become more obvious by day 3 (we have not had one last any longer than that due to it yumminess) This cake is currently under investigation as to what causes the green flecks and any findings can be posted under the review option and discussed in the forum. For the Cake
- 3 ounces butter
- 1½ cups raw sugar
- 9 ounces sour cream
- 3 eggs
- 1 cup flour
- ¾ cup whole wheat flour
- 1½ teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1½ teaspoons cinnamon
- 2 cups grated carrots
For the Icing
- 4 ounces cream cheese (at room temperature)
- 1 tablespoon butter (at room temperature)
- 1 teaspoon vanilla essence
- 2½ cups confectioners' sugar
