Ingredients

Metric Cups
  • 2 poussin (baby chickens/spatchcocks)
  • 200 grams butter
  • 3 cloves garlic (minced)
  • 2 tablespoons chopped fresh parsley
  • 2 lemons (juiced)
  • 2 cornish hens (baby chickens/spatchcocks)
  • 7 ounces butter
  • 3 cloves garlic (minced)

Method

  • Mix together the butter, juice of one lemon, parsley and garlic. Set aside
  • With kitchen scissors remove the backbones from the chickens and flatten with your hand
  • With your fingers, gently create a cavity between the skin and the flesh and place 1 tablespoon of the butter mix under the skin of the breast. If you wish you may also place some under the skin of the legs as well.
  • Finally take the skewers and skewer them through the chicken leg going up to the opposite wing. Place the second skewer in the opposite direction so there is an X going through the chicken. This enables you to turn the chicken easily.
  • Allow the chicken to marinate for up to an hour
  • Turn the bbq up to medium heat.
  • Melt the remaining butter mixture - it will be used to baste the chicken
  • Lightly oil the bbq plate and place the chicken breast side down on the bbq and baste with some of the melted butter mixture and some of the juice of the second lemon.
  • Keep a watchful eyes on the chicken and turn it when it gets a nice colour and continue to baste with the butter and lemon.
  • Cook for 25 - 30 mins in total, continually turning and basting
  • Check that they are cooked by piercing the thickest part of the chicken. It the juices run clear its cooked.
  • Serve with a fresh summer salad
