Mustard Chicken With Maple Syrup and Bacon

Mix the olive oil, maple syrup, garlic, mustard and thyme in a bowl. Use to coat the chicken. Place in an ovenproof dish. Top each piece of chicken with a ruffled rasher of bacon. Spoon over any remaining coating and add 3 tablespoons of cold water. Roast at 180 degrees C for about 25 mins.
