A beautiful salad to accompany a large variety of foods. Lamb, chicken, or just as a simple tasty salad.

Ingredients

Serves: 4 people, however very simple

Metric Cups
  • mixed salad leaves
  • fresh spinach
  • fresh coriander (chopped)
  • 6 leaves fresh mint (chopped)
  • 2 cloves garlic (chopped)
  • sundried tomatoes (optional)
  • ½ can chickpeas (rinsed)
  • 1 kiwi fruit (sliced)
  • mixed salad leaves
  • fresh spinach
  • cilantro (chopped)
  • 6 leaves fresh mint (chopped)
  • 2 cloves garlic (chopped)
  • sundried tomatoes (optional)
  • ½ can garbanzo beans (rinsed)
  • 1 kiwi fruit (sliced)

Method

The dressing:

  • Three table spoons of fresh virgin olive oil. (If it's been open for a month chuck it away or use it only in hot dishes)
  • Three Table spoons of dark soy sauce. (Or Ketjap manis which is Indonesian and a tad sweeter than normal soy)
  • One tea spoon of brown sugar
  • Two table spoons of blue poppy seeds
  • One clove of crushed, repeat, crushed, garlic. (Not chopped)
  • Pour the dressing over as you serve as it will not be as pretty...;-)

    Excellent with chicken pieces, delicious on a buttered baked potato, goes excellently as a splash and dash dinner with a good chuck of garlic bread, and because of the mint, perfectly accompanies a rack of lamb. Enjoy.
