Ingredients

Metric Cups
  • 6 sea bream
  • 1½ kilograms potatoes (wedges - parboiled for 10-15 minutes)
  • 1 large onion (roughly chopped)
  • 3 anchovies (chopped)
  • 2 teaspoons capers (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 4 cloves garlic
  • ½ teaspoon fresh rosemary (chopped)
  • ½ teaspoon thyme (chopped)
  • ¼ gram dried oregano
  • ¼ gram black pepper (ground)
  • 1 pinch of dried chilli flakes
  • 8 tablespoons olive oil

  • 3 anchovies (chopped)
  • 2 teaspoons capers (chopped)
  • 1 tablespoon fresh parsley (chopped)

  • ½ teaspoon fresh rosemary (chopped)

  • ounce dried oregano
  • ounce black pepper (ground)
  • 1 pinch of red pepper flakes
  • 8 tablespoons olive oil

Method

  • Very gently fry the onion, anchovies, capers, parsley, garlic, rosemary and thyme, pepper, oregano and chili in the oil until the onion has softened.
  • Spoon about a third of the herby mixture into the bottom of an ovenproof dish and place the bream on top.
  • Toss the potatoes in the remaining herby mixture and arrange around the fish.
  • Pour any remaining herby oil over the fish and cook at (190C) oven for 20 minutes

    The potatoes need to be fluffy around the edges wothout being cooked through and not so large that they will not finish cooking in the short time it takes to cook the fish.
