Ingredients

Serves: 25 mini or 12 large

Metric Cups
  • 125 grams butter (softened)
  • 125 grams caster sugar
  • 2 medium eggs (lightly beaten)
  • 1 teaspoon vanilla extract
  • 125 grams self-raising flour
  • 2 tablespoons milk
  • 4 ounces butter (softened)
  • 4 ounces superfine sugar
  • 2 medium eggs (lightly beaten)
  • 1 teaspoon vanilla extract
  • 4 ounces self-rising flour
  • 2 tablespoons milk

Method

  • Preheat oven 190c. Line muffin tins with cupcake papers.
  • Beat together butter & sugar until lovely & creamy. Add beaten egg & beat again until well mixed.
  • Beat in the vanilla. Add half of the sifted flour & fold to combine then add the milk & mix finally add the rest of the flour folding again to combine.
  • Spoon into your prepared paper cases & bake for about 12mins, depending on your sizes.

    I make sure I get lots of air into mine by beating the butter first then together with the sugar & giving it another good old beating with the egg. This is a basic batter & you can tweak it with other flavours i.e for chocolate batter mix 100g flour & 25g cocoa.
