Rhubarb Lemon Drink

Mix sugar with rhubarb, put in an ovenproof dish and stick the vanilla pod into the mixture. Bake for one hour. Sieve rhubarb (use pulp for a dessert) - keep the juice. For one drink: Mix 50 ml juice with water to taste and 30 ml Limoncello. Serve in long-drink glass with ice cubes.

Introduction
I had some leftover rhubarb juice from the Rhubarb Fool in Forever Summer.... and invented this fresh and summery drink. Beautiful colour!
