- 250 grams white beans (dry, tiger eyes)
- 150 grams black olives
- 2 sticks celery (sliced)
- 2 red onions (sliced)
- 1 bouquet garni
- 1 onion (halved)
- 5 tablespoons olive oil
- 3 tablespoons sage vinegar
- 8⅚ ounces white beans (dry, tiger eyes)

Method
Special Bean Salad is a community recipe submitted by Krakra58 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.
- Soak the beans for one night in cold water.
- Drain and put them in a pan with cold water, the bouquet garni, the halved onion and 1 tbsp. oliveoil. Cook themon a medium heat for 30 minutes, then drain and let them cool.
- While the beans are cooking, pour in a bowl the vinegar, 4 tbsp. oliveoil, salt and pepper.
- Add the luke warm beans, the red onion and selery slices and the olives.
- Mix well and serve slightly chilled.

This goes lovely with homemade pasta's like cheese Ravioli with a creamy garlic, walnut and parmasan cheese sauce and some grilled fish.
