Introduction

This soup is delicious! Adjust the amount of chilies to your own liking and remove the seeds if you want less hotness. Instead of prawn, you can use fish, eg. salmon. Add the fish cubes to the soup in step #2.

Ingredients

Metric Cups
  • 1 onion
  • 1 tablespoon fresh ginger
  • ½ teaspoon turmeric
  • 2 teaspoons vegetable oil
  • 800 millilitres fish stock
  • 165 millilitres coconut milk
  • 300 grams prawns
  • 1 small pak choi (or half chinese cabbage)
  • 2 tablespoons lime juice
  • red chillies (to taste)
  • 125 grams rice (or egg noodles)
  • fresh coriander

  • 2 teaspoons vegetable oil
  • 28 fluid ounces fish broth
  • 6 fluid ounces coconut milk
  • 10⅗ ounces shrimp
  • 1 small baby bok choy (or half chinese cabbage)
  • 2 tablespoons lime juice
  • red chiles (to taste)
  • 4⅖ ounces rice (or egg noodles)

Method

  • Chop the onion and grate the ginger. Heat the oil in a kettle and add the turmeric and the onion and ginger. Let them soften on low heat. Add the fish stock and coconut milk. Bring to a boil.
  • Slice the pak-choi or Chinese cabbage into thin slices and add them, along with the lime juice and chopped chillies, into the soup. Let the soup boil for a couple of minutes.
  • Just before serving, add the prawn. Prepare the noodles according to their packet's instructions and put into serving bowls with the soup. Sprinkle some fresh coriander on the soup.
