This is my favorite greens recipe, not only because it's so delicious (hot AND cold!) but because my southern-bred american friends all think i use ham or turkey to flavor it. i'd hate to disappoint and reveal it's all veggies...hence, my lips are sealed.

Ingredients

Serves: 4

Metric Cups
  • 2 packets collard greens
  • 6 medium roma tomatoes (sliced)
  • 2 large onions (sliced)
  • 6 cloves garlic (peeled and chopped)
  • kosher salt
  • olive oil

Method

sautee some garlic and a few onions in a bit of oil

when just shy of clear, pour in 3/4 cups water

bring water to boil

begin layering - greens, onions, tomatoes, garlic, salt - until pot is full

turn heat down to medium

as greens cook down, add more layers

be sure to toss veggies to avoid burning

cook until soft

enjoy!
