Andrew's Vegetarian Christmas Pie

First, peel and then par-boil the potatoes. Drain them and leave to the side. Roll out the pastry and ideally using a Springform Pan cut out a circle of pastry for the top of the pie. Next, butter the pan. Use the rest of the pastry to line the pan. Next add a layer of potato, then a layer of cheese and onion, seasoned with pepper. Repeat until pie is full. Now add the cream to the top of the mixture. Put the cut out lid on top of the pie, creating a small whole in the centre for any steam to escape. Use any remaining pastry to decorate the pie. Leaves look good or even spell out Merry Christmas! Bake at 200-degrees for 40 minutes or until golden. Enjoy.

Introduction
As a vegetarian teenager, this was my favourite alternative Christmas dish. Very filling, rich and savoury. I think everyone else rather resented the turkey and wanted the pie instead!

- 1 dash double cream (large dash)
