Introduction

A potato salad with a twist, this salad has some awesome ingredients in it. Totally different to the boring old potato salad with mayonnaise.

Ingredients

Serves: 8

  • 12 medium potatoes
  • ¾ cup sour cream
  • ¾ cup mayonnaise
  • 2 tablespoons vinegar
  • 1 pinch of salt
  • 1 pinch of freshly ground pepper
  • ⅞ fluid ounce wholegrain mustard
  • 5¼ fluid ounces chopped capers
  • 5¼ fluid ounces chopped scallions
  • 5¼ fluid ounces chopped gherkins
  • 10½ fluid ounces crumbled feta cheese

  • Boil potatoes, when cooked skin potatoes while still hot cut up into cubes.
  • While the potatoes are cooking, Beat mayonnaise, cream vinegar salt and pepper together well Stir in the whole grain mustard, chopped capers, chopped scallions, chopped gherkins and crumbed feta cheese, pour over the hot cut up potato cubes.
  • Put into the fridge and chill.

    • This potato salad got raving reviews at my daughter's 21st birthday celebrations recently. The salad is much lighter than the usual creamy gloop without being too acidic. I did not peel the potatoes and added a little bit of tarragon. Delicious!
