the most delicious and weird looking salad ever !!! I have this recipe from a vegetarian friend who always succeeds in surprising me with her oh so delicious dishes and who is my most favorite cook ever. At first people may have to be convinced to take a bite because It looks so weird, looking purple and all that, but once they have tasted this salad they are lost :-)

Ingredients
Serves: 1-2
- 1 packet beetroots (in juice - sold in plastic vacuum packs of 4 peeled beets, approximately a fist in size)
- 3 tablespoons honey
- 2 granny smith apples
- 250 grams sour cream
- 2 handfuls walnuts (dried)

I have been making another version of this for years! Mine is simply boiled fresh beets, peeled and cubed - then mixed with the best plain yogurt. It is a very refreshing summer salad served chilled. Never thought of it as weird looking though, because it is the most extraordinary shade of fushia pink to ever be set on a table! Can't wait to try yours.
