This is a soup ideal for those cold winterdays, when you have a cold yourselves, sore throat or you just need something hot and tasty in a bowl in front of the tv.

Ingredients

Serves: 4

Metric Cups
  • 3 chicken fillets (cut into small cubes)
  • basmati rice (or similar)
  • chicken stock
  • 1 can peas (or frozen)
  • 1 tablespoon curry powder (yellow)
  • 1 large onion (chopped)
  • 1 tablespoon butter (or vegetable oil)
  • single cream
  • 1 pinch of pepper
  • 3 tomatoes (chopped)
  • fresh flatleaf parsley
  • 3 chicken fillets (cut into small cubes)
  • basmati rice (or similar)
  • chicken broth
  • 1 can peas (or frozen)
  • 1 tablespoon curry powder (yellow)
  • 1 large onion (chopped)
  • 1 tablespoon butter (or vegetable oil)
  • heavy cream
  • 1 pinch of pepper
  • 3 tomatoes (chopped)
  • fresh italian parsley

Method

Hot and Golden Chicken Soup is a community recipe submitted by Millasmat.com and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Melt the butter in a large saucepan and add the onion, let it sweat for a little bit before adding the curry powder and the rice. Stir well and pour over the chicken stock and let it all cook for 10 minutes.
  • Then add the chicken meat and let it cook for another ten minutes. Add the peas just a couple of minutes before the 10 minutes have passed and remove the pan from the heat.
  • Add the cream and some pepper and you're done.
  • Serve the soup with a spoon of chopped tomatoes in the middle and some parsley on top and the bread or/and biscuits of your choice.
