Ingredients

Serves: 5-12

Metric Cups
  • 100 grams dried fruit
  • 150 millilitres orange juice
  • 100 grams butter (softened)
  • 100 grams light brown muscovado sugar
  • 2 medium eggs
  • 100 grams ground almonds
  • 175 grams self-raising flour
  • 3 tablespoons milk
  • 50 grams chocolate chips
  • 85 grams pecan nuts
  • icing sugar (for dusting)
  • 4 ounces dried fruit
  • 5¼ fluid ounces orange juice
  • 4 ounces butter (softened)
  • 4 ounces light brown sugar
  • 2 medium eggs
  • 4 ounces almond meal
  • 6 ounces self-rising flour
  • 3 tablespoons milk
  • 2 ounces chocolate chips
  • 3 ounces pecan nuts
  • confectioners' sugar (for dusting)

Method

  • Heat oven to 180oC/gas 4. Line the base of 1.2litre loaf tin.
  • Chop fruit and simmer in a small pan with the orange juice for 5 mins. Allow to cool.
  • Put butter, sugar, eggs, almonds, flour and milk in a bowl and beat until smooth. Stir in fruit, choc and two thirds of the pecans.
  • Spoon into the loaf tin and smooth the top. Scatter over the remaining pecans and bake for 50-60 mins until firm to the touch.
  • Cool in the tin, turn out and dust with icing sugar.

    Original recipe said apricots for fruit but you can use anything you fancy. I've tried tropical fruit mix and sour cherries which was amazing! I always make 2 of these loaves and freeze one. Enjoy!
