Easy Chicken With Sweetcorn and Chive Sauce

Heat the olive oil in a pan Add the chicken pieces Cook until there are no traces of pink (thighs do take longer than breasts) Transfer to a warm oven while you get on with the sauce Pour the chicken broth and wine, if using, into the pan and bring to boil Reduce heat and bubble for 2 minutes until stock is slightly reduced Add the drained sweetcorn and chives, then the creme fraiche or double cream Season to taste Remove chicken from oven and add to the sauce in pan Lovely served with plain rice

This recipe is a family favourite of ours. We've been making this for so long I've no recollection where the original recipe came from!

- 1 tin sweetcorn
- 1 handful fresh chives
- 7 fluid ounces creme fraiche
- salt
