Beautiful Risotto

Saute chicken, bacon, onion & mushrooms, until meat is cooked. A dd rice, stir for 1 minute. Add wine, stir until alcohol smell disappears. Add stock one cup at a time, stirring continuously until stock is absorbed by the rice. Add veggies after three cups have been added, depending on their cooking time. When last cup of stock is absorbed, taste to ensure that your rice is cooked. (risotto with hard rice is horrible!) If rice is hard, add a little extra boiling water, let absorb, taste again to check if cooked. When rice is cooked completely, stir through cream to taste, serve with cracked pepper, parmesan cheese shavings and of course a glass (or three) of your favourite white wine.

Serves: Makes generous servings for 4
- 1½ cups arborio rice
- 6 cups chicken broth (1 tsp stock to 1 cup water)
- 1 cup white wine
- 1 thickly diced onion
- 6 sliced mushrooms
- 1 pepper
- 1 Parmesan cheese (a few shavings)
- 1 chicken (or pork cut into strips - optional)
- 1 cup any vegetables (optional)
- 1 diced bacon ( optional)
- 1 cream (optional)
