Introduction
Living in South Africa (on the South Coast near Durban) I love curry. The local hot Indian curry is very enjoyable, but I far prefer the (milder) Cape Malay curry.

Ingredients
Serves: 4 - 6
- 700 grams beef (cubed - to the point of being wasteful I cut off all fat and especially any sinewy parts)
- 200 grams baby carrots
- 1 small butternut squash (peeled and cut into cubes)
- 200 grams squash (if big cut in half)
- 200 grams courgettes
- 1 tablespoon mild cape curry (yellow)
- 200 grams baby potatoes (in skins)
- ½ large onion (sliced)
- 200 grams onions (small)
- 1 pinch of cayenne pepper
- 1 teaspoon mustard
- 1 teaspoon garlic (crushed)
- 1 teaspoon crushed fresh ginger
- 100 grams peaches (dried, soaked)
- olive oil (or grapeseed oil)
- 1 pinch of salt
- pepper
- 100 millilitres vinegar
- 125 millilitres brown sugar
- warm water
- ½ packet instant soup (curry flavour - white onion or mixed vegetable soup will also do)

- 1 tablespoon mild cape curry (yellow)

- 7 ounces onions (small)
- 1 pinch of cayenne pepper
- 1 teaspoon mustard
- 1 teaspoon garlic (crushed)
- 1 teaspoon crushed fresh gingerroot
- 3½ ounces peaches (dried, soaked)
- olive oil (or grapeseed oil)
- 1 pinch of salt
- pepper
- 4 fluid ounces vinegar
- 4 fluid ounces brown sugar
- warm water
- ½ packet instant soup (curry flavour - white onion or mixed vegetable soup will also do)

Additional Information
