Halloumi Red Peppers

Grill or roast the peppers whole until softened. Cut them at the top and bottom, and deseed them. Open out into strips. Place a slice of halloumi in the centre of each pepper strip. Sprinkle over some oregano, chilli, zest, juice and chives, and don't forget to season. Soak four pieces of kitchen string in some water. Then, wrap each pepper into a parcel, securing with the string. Cook the peppers on the BBQ or in the grill for 5 minutes each side until the cheese is starting to melt. Serve hot.
