Mix all ingredients together well. Place your meat in a heavy freezer zipper baggie, pour the marinade over it, squeeze out most of the excess air so the meat is well covered in the marinade. Leave in the fridge a minimum of two hours, preferably overnight. Cook meat as you regularly would, (roasted or barbecued) Discard excess marinade and baggie
Introduction
a simple, yet stunning marinade for any red meat, although I first developed it for caribou. feel free to change the amounts of ingredients to suit your own tastes - usually I do this one by feel.

Serves: 6
- 4 cloves garlic (good sized, smashed and chopped)
- 1 inch finely grated fresh gingerroot
- 1 teaspoon finely chopped fresh basil
- ½ cup balsamic vinegar
- ½ cup extra virgin olive oil
- red meat (your favourite cut)
