Platinum Jubilee Trifle

Introduction

I was asked by my local Church if I could do a pudding for the Platinum Jubilee tea in June for the local community they would be doing. My first thought was what can I do? After chatting to Sarah Edwards at work, who suggesting using Strawberries and Blueberries as you can get them all year long. I decided on something simple but rich.

Ingredients

Serves: 10

  • 1 swiss roll (sliced)
  • 240 grams strawberries
  • 200 grams blueberries
  • 300 millilitres double cream
  • 500 grams Greek yoghurt
  • 100 millilitres sherry
  • 4 heaped tablespoons icing sugar
  • 2 heaped tablespoons caster sugar
  • 1 vanilla pod

Method

Platinum Jubilee Trifle is a community recipe submitted by Brybaz and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  1. To make the Coulis: Cut in half 140g of Strawberries and put in a pot. Add 100ml of Sherry and 2 tablespoons of caster sugar. Heat slowly to a simmer until the strawberries are soft and the sugar has dissolved. Cut the Vanilla pod in half and scrape out half the vanilla into the cooling Strawberry mix.
  2. While the Coulis is cooling: Cut the Swiss Roll in slices and arrange on the bottom and sides of a trifle bowl or glass serving dish. Cut enough Strawberries in half put some on the side on top of the Swiss Roll with the cut side facing outward. Cut the rest and add them to the coulis but take out any that you want for the decoration first.
  3. Put the cooled Strawberries into a blender and make smooth. Then cover the Swiss Roll with 4 tablespoons of coulis.
  4. Add the 2 tablespoons of icing sugar to the double cream, and add the rest of the vanilla and whip until soft peaks and thick. Fold in the Greek yoghurt until mixed.
  5. Spoon some of the cream into a bowl and add some coulis between each layer.
  6. When the cream is all used up. Add the blueberries on top and any coulis that is left. When looking at the side, you should see the red of the strawberries, white of the cream and the blueberries on top, giving a jubilee feel.

TIP You can arrange the blueberries and any strawberries on top to form a Union Flag, or use raspberries, or just use the blueberries and coulis in any design you think would be good for a jubilee.
