Lemon Squares

Introduction

This is my mother's recipe for the best lemon squares I have ever tasted. To make things even better, it is extremely fast and simple to bake!

Ingredients

Serves: Makes 16 small squares

  • 2 tablespoons lemon juice
  • 1 grated lemon peel
  • 1 cup flour
  • ½ cup butter
  • ¼ cup confectioners' sugar
  • 2 medium eggs
  • 1 cup sugar
  • 2 tablespoons flour
  • ½ teaspoon baking powder

Method

  1. Preheat oven to 350°F
  2. Blend the cup of flour with the butter and confectioners' sugar.
  3. Press this mixture into the pan and bake for 15 minutes to form the crust.
  4. Combine remaining ingredients. Spoon lemon mixture into the pan and bake for another 25 minutes at 350F.
  5. Once baked, sift confectioners' sugar over and cut into squares.
  6. Serve at room temperature.
