Halloween Cookies

Introduction

These are great for dunking in milk, tea, coffee, or in any witch's brew!

Ingredients

Serves: 12

For the Cookie Dough

  • 1 stick butter (at room temperature)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 pinch of salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 cups confectioners' sugar

For the Icing

  • 1 medium beaten egg white
  • food colouring
  • sprinkles

Method

  • In a large stand mixer, on medium speed, beat butter and sugar until fluffy and cream colored. Add egg and vanilla extract. Gradually add sifted flour, salt, baking soda, and baking powder. Mix well.
  • Wrap dough in plastic wrap. Chill over night.
  • Let the dough sit at room temperature before rolling it out. On a clean and flour-dusted wooden board, roll out dough to 1/4 inch thickness.
  • Cut out into fun bats, pumpkins, witches, ghosts, cats, etc...
  • Bake at 350 degrees F. until golden and fragrant, about 15 minutes. Let them cool on a wire rack.
  • Back in the stand mixer, whip together powdered sugar and egg white. Color with desired shades of orange, black, white, purple, etc...
  • Spread even layers of icing on each cookie and let children sprinkle decorative sugar confetti. Let the cookies sit for a few minutes to allow the icing to settle and firm up.
  • Additional Information

    These cookies can be made for Christmas in star, snowflakes, trees, santa, elves, stockings, canes, etc...as edible ornaments. Before baking, poke small holes on top. Use decorative Christmas sugar for sprinkling.
