Large Chocolate Centered Cookies

In a stand mixer or a large bowl with electric whisk, whip butter and sugar to form cream and puffy batter. Add egg and vanilla extract. Beat while adding flour, salt, baking soda, and baking powder. Divide the batter in half and whisk in dark chocolate chunks and almond bits to one half and white chocolate chunks and pistachios to the other half. On a large cookie sheet, arrange scoops of dough on baking paper or non stick sheet. Bake at 350 degrees F for 15-20 minutes.

- 1 cup almonds
- 1 cup pistachios
- 2 sticks butter
- 2 cups sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 pinch of salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
