My Mediterranean Pasta

In a large pasta pot, bring 4 quarts of water to boil. Add both pasta noodles and green beans (leave them long and whole). Add salt to boiling water. Cook until beans are tender crisp and pasta is firm to the bite, 10-15 minutes. In a large skillet, add oil, bacon strips, and salt and pepper. Drain pasta and green beans. Toss the pasta and green beans into the skillet with bacon. Toss well, and add more oil, salt, and pepper to taste. Serve in a large pasta bowl. Sprinkle toasted pine nuts and grated parmesan on top. Serve with chilled white wine, and large loaf of crusty bread, and a bowl of seasonal fruit.

- 1 pound angel hair pasta (whole grain)
- 2 pounds fresh, whole) green beans
- 6 rashers smoked turkey bacon (large strips)
- salt
- freshly ground pepper
- ½ cup grated Parmesan cheese
- 3 tablespoons extra virgin olive oil
- ½ cup toasted pinenuts

Additional Information
Try this recipe with shrimp to turn it into a seaside lunch. Add 2 pounds of cooked shrimps to the bacon in the skillet and toss through.
