Warm Spinach, Feta, and Artichoke Dip

In a large cast iron pot, heat olive oil. Add thawed spinach, artichoke hearts, salt, pepper, lemon juice, mayo, cheddar, parmesan, and feta. Stir and mix well. Place lid on. Heat up on medium high for 20 minutes or until cheese is melted and bubbly. Serve in a party platter wide enough to allow dipping. Arrange an assortment of chips, bread slices, bread sticks, pretzels, carrot sticks, cucumber slices, tomato wedges, lemon slices, and pickles in pretty colorful platters. Place the warm spinach, feta, and artichoke dip in the center of the table for dipping. Serve with Hummus, eggplant dip, and Pita slices toasted with a little olive oil and dried oregano.

Serves: 12-16 as party appetizer
- 4 cups chopped spinach (frozen, and thawed)
- 12 ounces artichoke hearts (in jars - marinated)
- 2 tablespoons freshly squeezed lemon juice
- 1 pinch of salt
- freshly ground pepper
- ½ cup mayonnaise
- 1 cup shredded Cheddar cheese
- ½ cup grated Parmesan cheese
- 1 cup crumbled feta cheese
- 1 tablespoon olive oil
