Ingredients

Metric Cups
  • 5 potatoes
  • 1 chorizo (sliced into bite sized pieces)
  • (2:1 or spring greens or savoy cabbage - cut into ribbons)
  • olive oil (to taste)
  • salt
  • pepper

Method

Caldo Verde is a community recipe submitted by Rosiela and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Peel potatoes and cut them into quarters (you will be mashing them so don't worry to much about the shape).
  • Add them to your stock and cook until they are falling apart, at this stage mash them and your 'soup' will thicken.
  • You will now see if you want to add more liquid, if so add more.
  • Add your chorizo, allow this to come to a simmer and let all the paprika come out of the sausage (about 5 min).
  • Then add your kale which has been sliced into thin ribbons (looks like linguine), let this simmer for 5 min.
  • Now all you have to do is season with salt, pepper and olive oil (use a good olive oil) to taste.
