Yougurt & Eggplant

Introduction

It's unusual and yum.

Ingredients

Serves: 4

  • 1 teaspoon English mustard
  • 1 cup Greek yoghurt
  • salt (to taste)
  • sugar (to taste)
  • chopped fresh parsley
  • 1 large eggplant (cut into thick slices)

Method

  • Coat the eggplant with salt and rub a garlic clove in it,if possible add some turmeric powder or pinch curry powder to the salt while coating. Leave for 15 minutes and pan fry till eggplant is soft and brown
  • Mix the remaining ingredients.
  • Lay the pan fried eggplant in a dish and pour the yogurt sauce over it just before serving
