Stir-fry red onion and peppers in very hot olive oil in a wok until charred and remove to a plate. Then add more oil and stir-fry chicken strips and sliced mushrooms. Then return the onion and peppers, add a good shake of Cajun seasoning and heat through. Serve straight away while sizzling. Heat soft flour tortillas in a flat pan, until starting to blister and each person fills and rolls them themselves, with whatever they fancy. In my case that's everything. And my tortillas always burst open because I've crammed so much inside. Not elegant things to eat and you need a lot of paper towels, but oh so good.

- grated cheese
- guacamole
- sour cream (or creme fraiche)
- tortilla chips
- sliced chicken breasts
- sliced mushrooms
- red onions (cut into wedges)
- 1 sliced red bell pepper
- 1 sliced yellow bell pepper
- 1 sliced orange bell pepper
- tortilla wraps
