Fish in the Oven

Introduction

There are several kinds of fishes to cook in the oven, however, They're not all at the same price. Still, the most expensive one is the best (in my "humble" opinion) to do for a 6-person meal, since it's always HUGE! I'm giving the recipe with my favourite fish, the Sea bream, although I've made this with another specie (much smaller and way much more affordable - the rock bass)

  • Take the fish and do 3 incisions until the fishbone, on each side. Place the bacon inside these cuts.
  • Put a little olive oil (1tbsp) in the tray and place in there the fish. Then, peel the potatoes and cut them in cubes. They'll be cooked around the fish, in the same tray. Pour the fish and the potatoes with olive oil (be generous to the potatoes), and then while the oven is heating, (180ºC) peel and slice the onions, They must be placed in the top of the potatoes.
  • Add a bit of salt, be generous with the herbs (dry garlic and coriander go perfectly, mixed together).
  • Then, put it in the oven for about 1h and let it cook gently while you do a delicious dessert! Or maybe not...
  • If you think This is not enough, or it's too heavy, a mixed salad (tomato w/ lettuce) is the perfect combination!
